A study from the University of California, Riverside, raises concerns about the health impact of soybean oil, commonly used in South African kitchens. The research, conducted on mice, suggests that soybean oil may contribute to weight gain and metabolic issues due to how it interacts with a liver protein called HNF4α. This protein regulates genes related to fat metabolism, and its alternative form, produced under certain conditions, may protect against weight gain.
